Meal Planning Monday

Linking up with Emily again for Meal Planning Monday!


I am doing another 8 day challenge this week, so my week will be a little strange. Instead of an actual 8 day challenge, I plan to a 4 day one. 

Monday, Tuesday, and Thursday

Monday, Tuesday, and Thursday will be shake days. I'll probably have a lot of coffee shakes this week for meals. Maybe do a lemon shake for dinner! They are pretty good!

For protein snacks, I plan on doing a few things I found on pinterest in the afternoon and protein bars or omelets for breakfast. 

Here are a few of my snacks I plan on making this week.... 



Wednesday

I have been wanting pizza like everyday, so I am giving into the cravings this week!!!
I am making the quinoa pizza bites today even though the link isn't showing here.


Friday

I have a bacon wrapped chicken breast in the fridge that I need to use! I am going to stuff it with this yummy goodness :)


Saturday

I'll be at a wedding, so I'll try to keep my day full of low carb options!

Sunday

Last pizza day!!! I have been trying one new thing a week since I started really running out of foods i like! This week is cauliflower in a cooked way. Last week, I tried Zucchini, and I really liked it!

Cheat Day Recipes.... Crescent Roll Edition

I never though I was a big carb person- other than pasta- until I started a low carb diet. It sort of just slapped me in the face. One of my favorite things is crescent rolls. Last year (probably where the extra 20 lbs came from), I really became obsessed with these little things. It was definitely a staple for the last year. I have a million recipes that I could share with these little delicious things, but I could only find 2 different pictures, so I will share two instead of a million.


Stuffed Pizza Rolls


These are super, super easy!!! Perfect party food or a quick dinner! They are also kid friendly!
Ingredients:
1 Roll of Crescent Rolls
4 Mozzerella (or cheese of your choice) String Cheese Sticks
Pepperoni (I used the really big ones)
Marinara Sauce (or ranch)
Roll out the crescent rolls. Place pepperoni on each roll. Cut cheese stick in half. Place a piece on top of pepperoni. Roll crescent roll up. 

Bake for 8 minutes on 350. Dip in sauce!
Yum, Yum!


Buffalo Chicken Roll Up


Ingredients:
4 Grilled Chicken tenderloins, cut into pieces
1/4 cup of buffalo sauce, plus 2 tbsp. 
1/2 cup sour cream
ranch seasoning packet (1/2 of it)
1/2 cup shredded mozzarella cheese
1 roll of the crescent roll sheets

Put chicken and buffalo sauce in a bowl, and let the chicken absorb the sauce.
In a bowl, mix 2 tbsp of of buffalo sauce with ranch mix and sour cream. 
Spread over the unrolled crescent roll sheet. 
Place chicken over sour cream mix. 
Top with shredded cheese.
Carefully roll the log. 
Bake on 350 for 18-20 minutes.

Meal Planning Monday


Time for Meal Planning Monday again!

I didn't get around to cooking the honey mustard crockpot chicken saturday evening since the fam was coming to Clinton yesterday for hibachi, so I put it in last night for this week! I really did some digging this week to find recipes to eat honey mustard chicken with all week. I think I was pretty successful! Just for your information... I am very obsessed with several things lately.... honey mustard, caesar salad dressing, and all things laughing cow cheese. I try not to eat them everyday, but sometimes, I do. This week, they are taking over my menu :)


Monday

Honey Mustard CrockPot Chicken....(smelllllllls WONDERFUL), sweet potato with a cinnamon laughing cow cream cheese, and a side caesar salad. 





Tuesday

Honey Mustard Chicken Pizza :) There isn't a link for this one, but I am going to use wheat flatbread that I have, a little honey mustard for the sauce, some shredded chicken from Monday, and i'll use some of my laughing cow swiss cheese and shredded mozzarella on top! I'll top it will some crumbled bacon and some fresh basil from my garden! My stomach is really growling now!!!!



Wednesday

Chopped Chicken Caesar Salad... I'll take some spinach, lettuce, boiled egg, bacon, parmesan cheese, and chicken, and chop it up and toss it in caesar dressing. It's my quick and easy go-to meal these days!


Thursday

Honey Mustard Chicken Pasta

I'll change the bowties to wheat pasta, remove the peas, and make some other minor adjustments for this yummmmmmo looking meal!!!



Friday

Club Wraps....to wrap up the end of the chicken! I'm going to put these on the George Forman to make mock paninis to go with my Low Carb Chips and Dip :)



Saturday- eggs, a sandwich, something easy. I have two party invitations, so I'll be out.

Sunday

I have pork in the freezer, so I'm thinking about these little babies.... I just need to go get some peaches.... of course they'd have to be on my george, so they would be as good, but this is just yelling summer sunday lunch!

Chicken Taco Pizza :)

I made this a few weeks ago and brought some for lunch the next day. The two boys that sit next to me at lunch ALWAYS try whatever I make. They are in love with this pizza! They ask for it everyday!! They saw me putting recipes up during planning period yesterday and immediatly told me to write out this recipe. sooooo... here I am typing a recipe for chicken taco pizza, for anyone interested.

Pizza Pizza?!

1 pizza crust (you can make your own, or buy a can of dough from the store and roll it out)
1 can of green salsa (or you can make my tomatillo sauce from the Mexican Manicotti blog)
1 rotisserrie chicken, stredded
1 packet of chicken taco seasoning (or the packet of your choice)
1 block of pepperjack cheese, shredded

Special Gadgets
1 pizza tray ( i prefer to use the round ones with holes, because i like a thin and crispy crust - you can also use a pizza stone)

Roll pizza crust into desired shape (for me, a large circle).
Place shaped dough on pizza tray and bake on 350 degrees for 15 minutes.
While your dough is baking, take shredded chicken and mix in seasoning packet with a little bit of water (enough to allow the seasoning to coat all of the chicken).
Remove from oven.
Pour on a light coat of green salsa.
Place seasoned chicken on top of salsa.
Scatter cheese on top and bake for 10-15 minutes or until all cheese is melted and bubbly.

From here on, it's up to your imagination.
You can place lettuce, tomatoe, avocado, sour cream, etc. on top and serve, or just eat it as is (which i prefer!).

Serve with a tossed salad!
